The Benefits of Learning at The Italian Culinary Academy
Classic Yet Flexible
For lovers of Italian cuisine, the Italian Culinary Academy can jump-start a lifelong passion and professional career in lasagna, antipasti, and vino. The ICA is located in the International Culinary Center in New York City and offers training for any foodie to learn the art, love, culture, and passion behind traditional Italian cooking. The program is overseen by Master Chef Cesare Casella and classes are taught by professional Chef-Instructors.
Two Courses to Choose From
ICA’s two programs include Italian Culinary Experience and Essentials of Italian Cooking. The Italian Culinary Experience is true to its name, offering 29 weeks of complete immersion in Italian language, culture, history, and of course, cooking. Students spend the first ten weeks at the New York City campus learning basic Italian language, cultural traditions, and cooking techniques. Then it’s off to ALMA, the International School of Italian Cuisine, in Parma, Italy for 19 weeks of further immersion in language, culture, history, and culinary training in cheeses, antipasti, pasta, stocks/sauces, fish, meats, wines, and desserts. Before completing this course, students will spend 360 hours working in a top Italian restaurant
The Essentials of Italian Cooking class is a condensed version of the Experience course, minus the travel to Italy. Through 40 hours of training over one month of evening classes, students gain an intensive overview of Italian culture and cooking, including pastas, cheeses, wines, sauces, fish, meats, vegetables, desserts, among others.
The Immersion Approach
The immersion approach of ICA’s courses has students cooking from day one so they can focus on immediately applying techniques learned in the classroom. ICA’s facilities boast a custom-designed Italian kitchen complete with a brick-lined pizza oven and Italian marble chef stations. Before enrolling, applicants can attend an on-campus or online open house, or schedule a tour of the facility. The cost of these programs can be daunting; however financial aid and scholarship options are available.
Niche Marketing
After completing these Italian culinary training courses, you will be able to market yourself as a niche professional. This may limit job prospects directly out of school, but a specialty salary in New York City can eventually pay off for all the specialty training. Average New York City salaries are listed at around $55,000 for a pastry chef; $78,000 for an Italian chef, and $107,000 for a wine sommelier (www.indeed.com).

My husband and I currently have 4 pizzeria/restaurants located in Northern New Jersey. We are interested in hiring a culinary student to help improve our dishes and create menu specials. It could be a part time position which would be great for the student who is interested in making some money, gaining experience while going to school.
